Veggie Burgers
Ingredients:
- 1 cup cooked brown rice
- 1 cup canned black beans, drained and rinsed
- 1/2 cup chopped onion

- Mix well and form into four patties.
- Heat a large skillet or grill pan over medium-high heat and coat with cooking spray.
- Cook the patties for 4-5 minutes per side or until browned and heated through.
- Place each patty on a bun and top with a lettuce leaf and a tomato slice.
Chickpea Veggie Burger
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1/2 cup diced onion
- 1/2 cup fresh breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole wheat hamburger buns, toasted
- 4 lettuce leaves
- 4 tomato slices
Directions:
- In a large bowl, mash the chickpeas with a fork until they are mostly broken down.
- Add the onion, breadcrumbs, parsley, egg, lemon juice, cumin, coriander, salt, and pepper to the bowl and mix well.
- Form the mixture into four patties.
- Heat a large skillet or grill pan over medium-high heat and coat with cooking spray.
- Cook the patties for 4-5 minutes per side or until browned and heated through.
- Place each patty on a bun and top with a lettuce leaf and a tomato slice.
